Norma Dakhoul is the founder of ‘Norma’s Lebanese Foods’.
“An adventure, not just a cooking business” is the way Norma describes her venture. “It’s a unique experience to mix the culture, history and cooking methods in a way that stimulates your mind and taste buds” she adds.
Norma grew up in a migrant household where cooking and eating Lebanese food was an everyday occurance. Growing up in a big family with three sisters and a brother, her mother and sisters helped form the basis of her culinary background and her love of food.
Although Norma’s parents were married in Australia back in the wonderful 1950s, her father’s love for the old country led him back to Lebanon three times with the entire family. Norma was born in Daraya, a small village in the north of Lebanon, where she lived until the age of 11 amongst her extended family and under the immense influence of this traditional life. This too helped shape her younger formative years and her love for the simple and legendary village existence, the love of food and a strong sense of family.
On her recent trip to Lebanon, Norma realised the continued elegance of the Lebanese cuisine and its evolution through to modern day with minimal changes in style and taste. This reinforced Norma’s desire to tell her story through her cooking classes with an emphasis on tradition, history and culture.
