This class is an opportunity to step into the intimacy of home-style Lebanese cooking. Learn how to make some of Norma’s favourite dishes, the same delicious dishes she cooks for family and friends.

Fattoush

A colourful blend of fresh vegetables and crisp Lebanese bread, dressed with a tangy sumac and pomegranate dressing. This is also often referred to as Peasant Salad because it was traditionally made with whatever produce was available including leftover Lebanese bread that would be fried or toasted.

Smokey Baba Ghannouj

Eggplants are char-grilled over an open flame until they’re black and blistering resulting in an amazing smokey flavour. You won’t settle for pre-packaged Baba Ghannouj ever again once you discover how easy this is to make!

Kafta

Kafta is a succulent blend of mince, parsley and spices which can be formed into many shapes and sizes. Its versatility means it can be moulded onto sticks for barbecuing or grilling, shaped into meatballs and made into a casserole, or, spread onto flat bread and baked for a quick pizza. They say you’re not Lebanese if you can’t make Kafta.

Batata Harra

Sure to awaken the senses, these hot potatoes are made with roasted/fried potatoes and finished off with sautéed garlic, coriander, chilli & lemon juice. The tantalising aroma of these ingredients mixed together is unforgettable.

Nammoura

An eggless cake made with semolina, yoghurt and dotted with nuts, then soaked in a syrup infused with rose & orange essence. It is all things sweet and sticky.
